Thaumatin is a low-calorie sweetener extracted from the Katemfe fruit, popularly known as "Sudan's Miracle Fruit." In West Africa's rainforests, they are widely cultivated. The fruit consists of one to three black seeds encased in a gel and covered in a membranous sac known as the aril, which contains the sweetener. Thaumatin is an odourless, water-soluble protein with excellent heat resistance. Thaumatin I and Thaumatin II are the two primary types of protein found in the Katemfe plant. Despite the fact that Thaumatin is 2000 times sweeter than sucrose, it is mostly employed as a flavour enhancer rather than a sweetener, and it contributes no significant calories to the diet.
Thaumatin is now found in baked and savoury dishes, as well as desserts, fruit juices, milk powder, soft beverages, chewing gums, and coffee. It's usually combined with other natural sweeteners like Stevia to make it less bitter. Other artificial sweeteners are favoured over Thaumatin because of its licorice-like flavour and delayed onset. Thaumatin has GRAS status in the United States, which means it is not approved as a sweetener but is commonly used as a taste enhancer. Thaumatin has been approved as a sweetener by the European Food Safety Authority.
